HANDMADE PASTA--New class
Fresh pasta is most characteristic of Northern Italian cooking. The best is the kind you make yourself from scratch with delicious memorable rewards:each bite is extraordinarily tender, delicate and light, and almost melts in your mouth. Make machine rolled and hand shaped pastas. Experiment with vegetable flavored pastas and learn which sauces go best with different pastas.
