With the advent of our local farmer's markets,
CSAs, and backyard and community gardens,
it has become easier to focus on eating and
supporting local, organic, and sustainable
agriculture. The growing season offers a
plentitude of produce from which to choose.
Winter, on the other hand, presents a
challenge to eating locally for those of us
living in snow-covered Minnesota. By
storing, freezing, canning and drying procuce
from the summer's abundence, we can sustain
ourselves quite deliciously from the pantry
and the freezer throughout the bleaker
months.
In the cooking classes, all ingredients are
fresh, local and organic, and often right from
the garden, even in winter.
Whole grain natural foods are combined for
proper nutritional balance. Attention is paid
to lowering dietary fat. Food sensitivity
alternatives can be included. Having fun is an important ingredient, and of course, good taste is of the essence. Whether you are vegetarian or not, you will benefit from learning to cook with a wide variety of healthy foods as we are encouraged for our health to reduce the amount of meat and fat in our diet.
