         Primavera Sample Menu

         
                          Orzo with Grilled Asparagus, 
                           Scallions, and Baked Tofu

                 Spring Greens with Olives and Radishes

                         Strawberry-Rhubarb Cobbler

             BAKED TOFU

2 lbs firm tofu, pressed, cut into six ½” slices        
¼ c soy sauce
2 tsp maple syrup
 
Brush tofu pieces with the soy sauce and maple syrup mixed together.  Bake 15 minutes, turn over, brush other side with marinade, and bake another 15 minutes.  Cool to room temperature.  This tofu then can form the basis of many recipes.

              GRILLED TOFU 
   w/LEMON-GARLIC MARINADE

 

finely grated rind  & juice of two  
  lemons         ½ c cider vinegar           ¼ c honey 
1 TBS cumin     2 TBS Dijon mustard
5 large cloves garlic, pressed               
¼ c chopped fresh mint               
2 TBS chopped fresh lemon balm
½ c lemon olive oil

Blend ingredients, rind through lemon balm, in blender until smooth.  With blender running, slowly pour oil into the center to emulsify.  Soak baked tofu in marinade for up to two hours.  Preheat grill to medium–hot.  Place two pieces of tofu next to each other, the long sides touching.  Thread a skewer through the left sides of the two pieces, the other through the right sides of the same pieces.  Repeat for the other pieces.  This makes it easy to turn.  Grill for 5 minutes, turning frequently and basting with marinade, until lightly browned on both sides.   Serves 8.  (1 ½ pieces/person)
