LENTIL STUFFED
BRUSSELS SPROUTS
30 Brussels sprouts
½ c finely chopped scallions or onion 1 ¼ c chopped Brussels sprouts (the insides)
1 ½ c cooked lentils 1 tsp Dijon mustard
½ c lite mayonnaise 1/8 tsp cayenne
½ tsp salt ¼ tsp pepper
Steam the Brussels sprouts until tender yet still bright green. Run under cold water to retain color. Cut a small hollow in each one from the top and remove the insides. Chop insides and mix with remaining ingredients. Fill and chill. Serves 10-15
