APPLESAUCE GELATIN with TOFU CREME
APPLESAUCE GELETIN
w/TOFU MAPLE CRÈME
2 tsp powdered agar 1 ½ c apple cider
3 TBS honey 1 ½ TBS fresh lemon juice
3 c unsweetened applesauce
1 tsp cinnamon 1/8 tsp cloves
recipe of maple sweetened tofu crème
¼ c craisin 1 TBS mint leaves, chopped
Bring agar, apple cider, and honey to a boil and cook until the agar is completely dissolved. Remove from heat and immediately add the applesauce, lemon juice, and spices. Mix well. Pour into a mold just dipped in cold water. Refrigerate until set. Mix the tofu crème with the craisins and mint leaves in a small bowl. Cut squares or slices of the gelatin and put onto small plates or shallow bowls. Spoon the tofu crème on top to serve. Serves 8.
TOFU MAPLE CRÈME
2 boxes silken tofu, firm ½ c maple syrup
¾ tsp vanilla extract 1 tsp vinegar
1/8 tsp salt 2 TBS butter/oil or canola oil
Blend ingredients in batches in blender until smooth and creamy. Chill. Serve as topping for pudding, etc.
